Blend: Chardonnay 

Region: Champagne Grand Cru, Avize, Côte des Blancs, France

Viticulture: Respectful soil management. Chardonnay from the 1.3-hectare south-facing Champ Caïn parcel, planted in 1962 at the bottom of the slope. Calcareous clay, sand and silt with chalk gravel over Campanian chalk. Hand harvested. 

Winemaking: Fermented and aged on the lees in large old oak casks with bâtonnage and full malolactic fermentation. Bottled without fining or filtration, followed by extended lees ageing in bottle. Dosage varies by release, generally 0–2 g/L.
