Viticulture: Sustainably farmed fruit from Aux Thorey, a south- and east-facing Premier Cru at the northern end of Nuits-Saint-Georges, on fine gravel over oolitic limestone. Garcia works with a strong focus on vineyard biodiversity and balanced ecosystems.
Winemaking: Fermented with indigenous yeasts in stainless steel using one-third whole bunches, one-third baie-par-baie berries and one-third destemmed fruit. Around 17 days of cuvaison with gravity handling and progressive pressing. Malolactic fermentation and élevage in French oak barrels.
Pierre-Olivier Garcia, a winemaker in Burgundy, France, established his domaine in Nuits-St-Georges in 2016. He specializes in Pinot Noir, Gamay, and Aligoté, and is known for his deep understanding of the region's terroir. Garcia uses a unique, labor-intensive 'baie par baie' method, hand-selecting grapes for highly perfumed, detailed wines. His innovative approach has earned recognition and emulation in the Burgundy wine community.
