Viticulture: Low-intervention farming. Old-vine Meunier from small parcels around Gueux, including vineyards bordering Les Béguines, on sandy, calcareous soils. Late hand harvesting at full maturity.
Winemaking: Fermented spontaneously in used 400–600-litre oak barrels without chaptalisation. Traditional secondary fermentation followed by around 12–18 months on the lees in bottle.
La Closerie, established by Jérôme Prévost in Gueux, France, is renowned for its Pinot Meunier-focused Champagnes. Prévost's approach emphasizes terroir expression through single-vintage and minimal intervention winemaking.
Les Béguines, the estate's only vineyard site, is cultivated organically, with indigenous yeast fermentations and aging in mixed-age oak barrels. Known for its complexity and cult following, La Closerie's production includes the notable Les Béguines and a rare rosé.
