Viticulture: Demeter-certified biodynamic farming. Two parcels totalling 0.40 hectares, planted in 1975 and 1980 on clay and silty soils over limestone. Soils are worked by horse and grapes are hand harvested.

Winemaking: Generally vinified as whole bunches in open wooden vats without pumps or added sulphites. Aged for 15–18 months in French oak barrels, around 15% new.
