Viticulture: Organic farming without certification. Hand-harvested Chardonnay from Limozin, below the premiers crus Genevrières and Poruzots and beside Charmes. Southeast-facing at 230–240 metres, on silty clay-limestone soils. Old vines planted in the late 1930s.
Winemaking: Slow indigenous-yeast fermentation without added enzymes. Aged for around 18 months in French oak, with 20–25% new barrels. Minimal racking and almost no bâtonnage. Fined or filtered only when necessary.
Domaine Henri Germain & Fils, founded in 1973 in Meursault, Burgundy, covers around 8 hectares across Meursault, Chassagne-Montrachet, and Beaune. Led by Jean-François Germain and his daughter Lucie, the estate emphasizes organic principles, low yields, and meticulous care. Their cellar approach is minimal, with native yeast fermentation and extended aging on lees in old barrels. They produce both white and red wines, including notable Meursault Premier Crus and a rare red Meursault, Clos des Mouches. Known for elegant, age-worthy wines, the domaine highlights Burgundy’s unique terroir and traditional craftsmanship.
