Viticulture: Organic farming with biodynamic principles. Hand-harvested Chardonnay from Les Chevalières, above Meursault on the northern side of the appellation. Northeast-facing at around 270 metres, with thin, rocky limestone soils similar to those of Les Perrières.
Winemaking: Cold, slow fermentation without added yeasts or enzymes. Minimal racking and very little bâtonnage, with late malolactic fermentation. Aged for around 18 months in French oak, with 20–30% new barrels. Fined or filtered only when necessary.
Domaine Henri Germain & Fils, founded in 1973 in Meursault, Burgundy, covers around 8 hectares across Meursault, Chassagne-Montrachet, and Beaune. Led by Jean-François Germain and his daughter Lucie, the estate emphasizes organic principles, low yields, and meticulous care. Their cellar approach is minimal, with native yeast fermentation and extended aging on lees in old barrels. They produce both white and red wines, including notable Meursault Premier Crus and a rare red Meursault, Clos des Mouches. Known for elegant, age-worthy wines, the domaine highlights Burgundy’s unique terroir and traditional craftsmanship.
