Viticulture: Biodynamic farming across a contiguous 9.5-hectare vineyard on the western slope of the Corton hill. Vines extend from the forest line to the lower slope over varied limestone, marl, clay and silt soils. Hand harvested and vinified parcel by parcel.
Winemaking: Whole bunches are gently pressed and fermented with indigenous yeasts in 228l barriques. Aged for around 12 months in barrel, followed by six months in stainless steel before blending and bottling.
Domaine Bonneau du Martray is one of the great names of the Corton hill, based in Pernand-Vergelesses and devoted almost entirely to Corton-Charlemagne. The domaine produces only grand cru wines, with Chardonnay from Corton-Charlemagne and a small amount of red Corton from Pinot Noir. Its white wines are known for their length, restraint and mineral depth, combining the breadth of Corton with a firm, finely drawn structure. They are among the classic benchmarks for age-worthy white Burgundy.
