Viticulture: Certified organic from the 2024 vintage. Hand-harvested Merlot and Cabernet Franc from the limestone plateau above Saint-Émilion. The vineyard is planted to 62% Merlot and 38% Cabernet Franc on porous asteriated limestone crossed by water-retaining clay fissures. Horse-drawn cultivation is used to limit soil compaction.
Winemaking: Parcels are vinified separately in temperature-controlled, conical stainless-steel vats filled by gravity. Extraction centres on gentle manual pump-overs. Malolactic fermentation takes place in vats and barrels. Aged for 16–18 months in French oak, generally with around 45–50% new barrels and a small proportion of larger oak casks.
Château Canon is one of the great names of Saint-Émilion, set on the limestone plateau just above the village. Long admired for its elegance rather than sheer weight, the estate has become a benchmark for the more refined side of Right Bank Bordeaux, where Merlot and Cabernet Franc are shaped by cool limestone soils and careful élevage.
The wine is known for its perfume, precision and persistence. It can show dark berries, plum, violet, spice and a fine chalky line, with tannins that are firm and chiseled. Since its renewal under Chanel ownership, Canon has gained even greater consistency, producing a Saint-Émilion of polish and presence.
