Viticulture: Certified organic since 2018, with biodynamic preparations applied throughout the Enclos. The grand vin comes exclusively from old vines averaging around 60 years within the historic 47-hectare Enclos. Cabernet Sauvignon dominates the clay-gravel heart of the vineyard, while Merlot occupies cooler gravelly-sand sectors over clay and marl. Hand harvested and rigorously sorted.
Winemaking: Destemmed and gently crushed before gravity-fed, parcel-by-parcel fermentation in temperature-controlled stainless-steel vats. Maceration lasts around three weeks, followed by malolactic fermentation in vats or barrels. Aged for around 22–25 months in 100% new French oak barrels and traditionally fined with egg white before bottling.
Château Latour, one of Bordeaux's most prestigious vineyards, is famed for its exceptional terroir and First Growth status since 1855. Its 92-hectare estate in Pauillac predominantly grows Cabernet Sauvignon, producing the acclaimed grand vin Château Latour and second wine Les Forts de Latour. Owned by François Pinault since 1993, the estate emphasizes organic and biodynamic practices.
