Viticulture: Certified organic since 2018, with biodynamic preparations applied throughout the Enclos. The grand vin comes exclusively from old vines averaging around 60 years within the historic 47-hectare Enclos. Cabernet Sauvignon dominates the clay-gravel heart of the vineyard, while Merlot occupies cooler gravelly-sand sectors over clay and marl. Hand harvested and rigorously sorted.
Winemaking: Destemmed and gently crushed before gravity-fed, parcel-by-parcel fermentation in temperature-controlled stainless-steel vats. Maceration lasts around three weeks, followed by malolactic fermentation in vats or barrels. Aged for around 22–25 months in 100% new French oak barrels and traditionally fined with egg white before bottling.
