Viticulture: Sustainable farming in estate vineyards around Perno, with south-east to south-west exposures. Treatments are kept to a minimum and limited to sulphur and copper. Parcels are managed and harvested separately according to exposure, vine age and ripeness. Hand harvested.
Winemaking: Fermented spontaneously in stainless-steel vats with 15–20 days of skin contact. Aged for 20 months in large Slavonian oak casks, followed by six months in bottle. Naturally cold stabilised, unfined and unfiltered.
Ca' di Press, a recent venture by the Pressenda family in Monforte d'Alba, Piedmont, specializes in Barolo wines. Initiated by Alice and Cristina Pressenda, the winery produced its first vintage in 2018 from just one cask. The estate practices minimal intervention viticulture, emphasizing terroir through traditional vinification and natural stabilization without filtration.
