Viticulture: Traditional farming. Hand-harvested Chardonnay from 2.71 hectares of vineyards, with vines averaging 40 years old.

Winemaking: Pneumatic pressing followed by fermentation and 12 months of élevage in French oak barrels, with 20% new oak. Aged for a further six months in stainless steel before light filtration and bottling.

Domaine Jacques Carillon is located in Puligny-Montrachet and is led by Jacques Carillon. The family has been producing wine since the 16th century, and Jacques continues this tradition with a focus on Chardonnay. His philosophy emphasizes sustainable vineyard management, precise vinification, and minimal intervention in the cellar to preserve the purity and minerality of the terroir.
