Viticulture: Organic farming in conversion with biodynamic methods. A 0.5-hectare north-facing parcel at 1,200 metres, with 70–75-year-old vines on pure granite soils. Hand harvested, usually late in October.
Winemaking: Whole bunches ferment spontaneously in an open oak vat with a gentle 60–65-day maceration. Aged for 14 months in a 10-hectolitre French oak foudre, with no new-oak influence.
Comando G, founded in 2008 by Daniel Gómez Jiménez-Landi and Fernando García, focuses on old-vine Garnacha in Spain's Sierra de Gredos. They craft biodynamic, terroir-driven wines from high-altitude vineyards (600–1,200m) with granite and schist soils. Signature wines include "La Bruja de Rozas" and single-vineyard cuvées. Their minimal-intervention approach highlights the region’s unique character.
