Viticulture: Traditional parcel-by-parcel farming. The 90-hectare vineyard is centred on the Plateau de Mouton and planted to 81% Cabernet Sauvignon, 15% Merlot, 3% Cabernet Franc and 1% Petit Verdot. Vines average around 44 years at 10,000 vines per hectare on very deep gravel soils. Hand harvested and strictly selected, with only the finest parcels and oldest vines retained for the grand vin.
Winemaking: Destemmed and manually sorted before gravity-fed transfer into parcel-sized oak and stainless-steel vats. Vinified separately by parcel. Aged for around 20 months in 100% new French oak barrels, with traditional racking, topping-up and egg-white fining.
