Viticulture: Parcel-by-parcel farming with organic conversion underway. The 102-hectare vineyard lies in the southern part of Pauillac near the Gironde estuary and lies on a mosaic of deep gravel, clay and sandy soils. Each parcel receives tailored cultivation and harvest timing.
Winemaking: Parcels are vinified separately in temperature-controlled conical stainless-steel vats filled by gravity. Maceration lasts 18–24 days with regular pump-overs. Malolactic fermentation takes place in vat. Aged for around 18 months in 50–60% new barrels. Traditionally racked and fined with egg white before bottling.
