Viticulture: Organic farming without certification. Riesling from the 0.8-hectare Eckberg parcel at the top of Sommerberg, around 400 metres. Vines around 35–40 years old on poor, stony granite soils. Hand harvested.
Winemaking: Whole bunches are slowly pressed and lightly settled before spontaneous fermentation in old Alsatian foudres. Malolactic fermentation is not encouraged. Aged in foudre with no new oak and bottled without fining.
