Viticulture: Traditional farming. Hand-harvested Pinot Noir from the estate’s oldest parcels, centred on the historic Spiger site in Malans. Swiss and Burgundian clones and massal selections.
Winemaking: Destemmed grapes undergo classic maceration and fermentation. Aged in Burgundian French oak pièces, with around 30% new oak and the balance in one- and two-year-old barrels.
Domaine Donatsch in Malans (Bündner Herrschaft) is one of Switzerland’s true reference points—an estate in the Donatsch family since 1897, anchored by the historic “Zum Ochsen” and carried today by Martin Donatsch in the fifth generation. Building on Thomas Donatsch’s pioneering work in the 1970s—when he pushed Swiss wine forward with Burgundian varieties and cellar methods—the domaine has become synonymous with precision, quiet ambition, and age-worthy craftsmanship. From the steep Malanser sites to the rare local Completer, these are small-production wines with an international reputation and a distinctly Swiss sense of place.
