Viticulture: Organic farming. Savagnin from a south-facing vineyard in Rotalier. Around 35-year-old vines on chalky clay and marl over Bajocian limestone.
Winemaking: Whole clusters are crushed before a long, slow pressing. Indigenous-yeast fermentation in used French oak with natural malolactic fermentation. Aged for around 12 months in used barrels, followed by 2–4 months in stainless steel. Kept topped up in the ouillé style and bottled without fining or filtration.
Théo Dancer represents a new and more exploratory branch of the Dancer family story. The son of Vincent Dancer in Chassagne-Montrachet, he works partly alongside the family domaine while also developing wines under his own name, drawing on fruit from Burgundy as well as regions such as the Jura, Savoie, Beaujolais and the southern Rhône.
The wines feel deliberately freer than a classical Burgundy domaine range. Bourgogne Chardonnay and Aligoté sit beside cuvées such as Savagnin Jurassique and other Vin de France bottlings, often made in small quantities and with a clear sense of curiosity. They are marked by freshness, texture and a slightly unpolished energy — wines that keep the precision of the Dancer name, but open it toward something more experimental and contemporary.
