Natural wine polarizes. The term lacks a clear threshold; better seen as a spectrum from processed to minimally altered. Vineyard ecology matters as much as cellar practice; sulphur use is the flashpoint. True merit lies in wines that unite biodiversity, low intervention, and stability, expressing place with personality and pleasure.
