Cerbaiona was founded in 1977 by Diego Molinari, a former Alitalia pilot, and his wife Nora. They acquired the historic 17th-century estate near Montalcino and began planting vineyards. Under their leadership, Cerbaiona quickly gained recognition for producing high-quality Brunello di Montalcino wines. In 2015, the Molinaris sold the estate to an investor group led by Matthew Fioretti, who has continued to oversee its operations.
Cerbaiona cultivates approximately three hectares of vineyards on historic, east-facing slopes at an elevation of 350 meters. The primary grape variety is Sangiovese Grosso, which is used to produce the renowned Brunello di Montalcino and Rosso di Montalcino wines. Additionally, the estate produces a Vino da Tavola made from international grape varieties such as Cabernet Sauvignon and Merlot.

Cerbaiona's philosophy is rooted in traditional winemaking with minimal intervention to reflect the unique characteristics of the terroir. Since the 2015 acquisition, the vineyards have been converted to organic farming to promote the health of the vines and soils. Vinification is carried out with the aim of preserving the authenticity and quality of the wines, securing Cerbaiona's place among the most respected producers in Montalcino.
