Region: Meursault, Côte de Beaune, Burgundy, France

Viticulture: Organic farming with biodynamic principles. Hand-harvested Chardonnay from Les Chevalières, above Meursault on the northern side of the appellation. Northeast-facing at around 270 metres, with thin, rocky limestone soils similar to those of Les Perrières. 

Winemaking: Cold, slow fermentation without added yeasts or enzymes. Minimal racking and very little bâtonnage, with late malolactic fermentation. Aged for around 18 months in French oak, with 20–30% new barrels. Fined or filtered only when necessary.

Das Domaine Henri Germain & Fils, 1973 in Meursault im Burgund gegründet, umfasst etwa 8 Hektar in Meursault, Chassagne-Montrachet und Beaune. Unter der Leitung von Jean-François Germain und seiner Tochter Lucie setzt das Weingut auf biologische Grundsätze, geringe Erträge und sorgfältige Pflege. Im Keller wird minimal eingegriffen, mit spontaner Gärung und langer Reifung auf der Hefe in alten Fässern. Sie produzieren Weiß- und Rotweine, darunter herausragende Meursault Premier Crus und einen seltenen roten Meursault, Clos des Mouches. Das Weingut ist bekannt für elegante, lagerfähige Weine, die das Terroir des Burgunds verkörpern.
