Dominio del Águila is a family-run winery located in La Aguilera, a small village in the Ribera del Duero region of Spain. It was founded in 2010 by Jorge Monzón and his partner Isabel Rodero. Jorge Monzón, an experienced winemaker, previously honed his skills at prestigious wineries such as Domaine de la Romanée-Conti and Vega Sicilia. Isabel Rodero, an architect, was responsible for renovating the historic 15th-century cellars where the wines are now aged.
The vineyards of Dominio del Águila cover 30 hectares and are organically farmed. The vines, ranging in age from 60 to over 150 years, include varieties such as Tempranillo, Garnacha, Bobal, and Albillo. The wines are crafted using traditional methods: the grapes are not destemmed but are fermented as whole clusters, crushed by foot, and spontaneously fermented. They then mature in the deep, cool cellars, allowing for slow fermentation processes and the development of complex aromas
