Region: Champagne Grand Cru, Cramant, Côte des Blancs, France

Viticulture: Certified organic farming. Chardonnay from Les Longes Verges and La Garenne, planted on clay, limestone and sandy soils. Vines average around 55 years. Hand harvested. 

Winemaking: Fermented spontaneously with indigenous yeasts in Burgundy barrels. Traditional secondary fermentation followed by around 28 months on the lees in bottle. Extra Brut dosage of around 1 g/L.


Adrien Dhondt leads Dhondt-Grellet, a Champagne house known for its organic, biodynamic vineyards in France's Côte des Blancs. Adrien has focused on producing expressive, terroir-driven single-vineyard Champagnes, using minimal intervention techniques and indigenous yeasts. His notable cuvées include "Le Bateau" and "Les Terres Fines"​
