Viticulture: Certified organic farming. Hand-harvested fruit from the upper section of Le Mont Benoît, a southeast-facing hillside with thin silty clay-limestone soils over chalk. Massal-selection vines planted in 1962.
Winemaking: Indigenous-yeast fermentation followed by around 11 months on the lees in oak barrels. Aged for at least six years on the lees in bottle. Disgorged as Extra Brut, generally with a dosage around 2g/l.
