Region: Champagne Premier Cru, Cuis, Côte des Blancs, France

Viticulture: Organic farming with biodynamic principles. Chardonnay from the Les Nogers parcel, with vines around 55 years old on chalk soils. Low yields and hand harvesting. 

Winemaking: Whole bunches are pressed and fermented with indigenous yeasts in French oak barrels and stainless steel. Natural malolactic fermentation and around eight months on the fine lees before secondary fermentation. Unchaptalised, unfined and unfiltered, with an Extra Brut dosage of around 2–3 g/L. 


Adrien Dhondt leads Dhondt-Grellet, a Champagne house known for its organic, biodynamic vineyards in France's Côte des Blancs. Adrien has focused on producing expressive, terroir-driven single-vineyard Champagnes, using minimal intervention techniques and indigenous yeasts. His notable cuvées include "Le Bateau" and "Les Terres Fines"​
