Viticulture: Organic and biodynamic inspired farming. Cabernet Franc and Merlot from seven hectares of small, east- and southeast-facing terraces. Vines average around 50 years, with some parcels approaching a century. Asteriated limestone on the plateau and clay-limestone soils on the slopes. Harvest timing follows the maturity of each parcel.
Winemaking: Destemmed and fermented parcel by parcel in temperature-controlled wooden vats, with around four weeks of maceration. Transferred to French oak for malolactic fermentation and around 20 months of élevage, generally using 85–100% new barrels depending on the vintage. Aged in the estate’s underground limestone galleries.
