Viticulture: Integrated farming, certified HVE and ISO 14001. The 22-hectare vineyard forms a contiguous south-facing estate between the Ausone and Pavie hills. Planted to 70% Merlot and 30% Cabernet Franc, with vines averaging around 35 years. Limestone plateau, clay-limestone slopes and more siliceous soils at the foot of the hillside. Hand harvested into small crates.
Winemaking: Grapes are chilled before optical sorting and vinified parcel by parcel in temperature-controlled stainless-steel vats. Unusually A small proportion of whole bunches may be retained depending on the vintage. Pump-overs and punch-downs are used for extraction, with cold pre-fermentation and warm post-fermentation maceration. Aged for 14–16 months in 50-60% new oak.
Château La Gaffelière, a Premier Grand Cru Classé estate in Saint-Émilion, has been owned by the Malet-Roquefort family since the 1400s.
