Viticulture: Organic-focused farming with biodynamic practices. The contiguous 95-hectare vineyard is planted to 60% Cabernet Sauvignon, 32% Merlot, 6% Cabernet Franc and 2% Petit Verdot. Deep gravel and sand terraces over clay-rich subsoils provide natural drainage and water reserves. Parcels are managed individually and harvested by hand according to ripeness.
Winemaking: Bunches are manually sorted, destemmed, optically selected and sorted again by hand. Parcels are fermented separately in temperature-controlled stainless-steel vats, with maceration lasting up to 25 days. Aged for 18 months in French oak, with 60% new barrels. Racked by gravity and traditionally fined with egg white.
