Viticulture: Close-to-nature traditional farming. Hand-harvested Pinot Noir from the Selvenen vineyard. Very low yields and strict selection of the best grapes.
Winemaking: Fully destemmed and fermented by classic maceration. Aged for around 12 months in 100% new Burgundian French oak pièces, using light to medium toast.
Domaine Donatsch in Malans (Bündner Herrschaft) is one of Switzerland’s true reference points—an estate in the Donatsch family since 1897, anchored by the historic “Zum Ochsen” and carried today by Martin Donatsch in the fifth generation. Building on Thomas Donatsch’s pioneering work in the 1970s—when he pushed Swiss wine forward with Burgundian varieties and cellar methods—the domaine has become synonymous with precision, quiet ambition, and age-worthy craftsmanship.
