Viticulture: Certified organic and biodynamically farmed since 1999. Chardonnay from the southern side of Vertus, with massal-selection vines averaging around 35 years. Soil cultivation, controlled yields and hand harvesting at full maturity.

Winemaking: Gently pressed and lightly settled. Spontaneous alcoholic and malolactic fermentation in Stockinger casks and vats. Aged on the lees for one year without fining or filtration, followed by at least two years in bottle. Extra Brut dosage of 2 g/L.

Géré par leur fils Pierre depuis 1988, le domaine se concentre sur la vinification à faible intervention, mettant en avant le terroir grâce à une dosage minimal dans ses vins principalement à base de Chardonnay.
