Viticulture: Biodynamically influenced farming. Chardonnay from the Les Coullemets lieu-dit in Le Mesnil-sur-Oger, planted on chalk-rich soils. Low yields and hand harvesting.

Winemaking: Fermented spontaneously and aged on the fine lees in French oak barrels. Traditional secondary fermentation with extended bottle ageing under reduced pressure. Disgorged as Extra Brut with a dosage of around 1 g/L.
