Viticulture: Soil-focused farming with very low yields. Hand-harvested Chardonnay from predominantly lower-slope parcels in Avize, Cramant and Oger. Chalky marl soils with a stronger clay component than the domaine’s higher hillside sites.
Winemaking: Fermented with indigenous yeasts in 228-, 400- and 600-litre oak barrels. Malolactic fermentation is neither encouraged nor blocked. Aged for one year in oak, with around 16% new barrels entering the cellar rotation annually. Reserve wines spend one year in foudre before transfer to stainless steel. Matured for more than three years on the lees in bottle and disgorged as Brut, generally with 2–5g/l dosage depending on the release.
Jacques Selosse, a pioneering Champagne house in Avize, France, was founded in the 1950s by Jacques Selosse and is now led by his son, Anselme. The estate is renowned for its biodynamic, low-intervention winemaking, using native yeasts and minimal sulfites, and aging in oak barrels. Their unique Champagnes, like 'Substance' aged in a solera system, are highly sought after.
