Viticulture: Organic farming in conversion with biodynamic methods. Village parcels around Villanueva de Ávila at over 1,000 metres, with 30–60-year-old vines on granitic sand and silt soils. Hand harvested.
Winemaking: Partially destemmed grapes ferment spontaneously in open vats with gentle extraction and 40–60 days of maceration. Aged for 12 months in large French oak vats, with no new-oak influence.
Comando G, founded in 2008 by Daniel Gómez Jiménez-Landi and Fernando García, focuses on old-vine Garnacha in Spain's Sierra de Gredos. They craft biodynamic, terroir-driven wines from high-altitude vineyards (600–1,200m) with granite and schist soils. Signature wines include "La Bruja de Rozas" and single-vineyard cuvées. Their minimal-intervention approach highlights the region’s unique character.
