Viticulture: Certified organic farming. Hand-harvested from the 2.5-hectare Le Mont Benoît vineyard in Villers-aux-Nœuds. Southeast-facing clay, silt and limestone soils, with chalk, gravel and flint in the upper sections.
Winemaking: Indigenous-yeast fermentation and 11 months of ageing on the lees in oak barrels. Blended with 20–40% reserve wine, depending on the release. Aged for around two to three years on the lees in bottle. Unfined and unfiltered, with a dosage of 4g/l.
Emmanuel Brochet is a Champagne producer from Villers-aux-Noeuds, France, known for his organic vineyard Le Mont Benoit. Starting in 1997, he transitioned to organic farming by 2008, emphasizing terroir through minimal intervention and indigenous yeast fermentation.
