Viticulture: Organic farming without certification. Hand-harvested Chardonnay from a 0.5-hectare parcel in Les Fairendes, the upper section of Morgeot beneath Les Caillerets. East-facing at around 250 metres, on poor, pale limestone soils. Low yields and manual vineyard work.
Winemaking: Indigenous-yeast fermentation in the domaine’s cold cellar, without added enzymes or racking. Slow alcoholic fermentation and late malolactic fermentation. Aged for around 22 months in French oak, with 20–30% new barrels. Fined or filtered only when necessary.
Domaine Henri Germain & Fils, founded in 1973 in Meursault, Burgundy, covers around 8 hectares across Meursault, Chassagne-Montrachet, and Beaune. Led by Jean-François Germain and his daughter Lucie, the estate emphasizes organic principles, low yields, and meticulous care. Their cellar approach is minimal, with native yeast fermentation and extended aging on lees in old barrels. They produce both white and red wines, including notable Meursault Premier Crus and a rare red Meursault, Clos des Mouches. Known for elegant, age-worthy wines, the domaine highlights Burgundy’s unique terroir and traditional craftsmanship.
