Viticulture: Sustainable farming with worked soils and grassing on steeper parcels. Hand-harvested Chardonnay from a 0.25-hectare parcel directly below Bâtard-Montrachet, combining vines around 45 and 80 years old. Harvest timing aims for freshness and full maturity.
Winemaking: Whole-bunch pressing without crushing, using long and gentle press cycles. Fermented in 350-litre French oak barrels with around 30% new oak. Aged for 15–20 months without bâtonnage and bottled without filtration.
Pierre-Yves Colin-Morey, based in Chassagne-Montrachet, is a top Burgundy winemaker known for his exceptional Chardonnay wines. He emphasizes terroir, using sustainable farming and long elevage. Established in 2005, his domaine includes premier cru and grand cru vineyards, producing unfiltered, mineral-rich wines eagerly awaited each vintage.
