Viticulture: Traditional farming. Late-ripening Completer from calcareous slate soils in Malans. Harvested as a late harvest, usually around mid-November. 

Winemaking: Fermented and aged for around 9–12 months in used oak pièces, including old Chardonnay barrels.

Domaine Donatsch in Malans (Bündner Herrschaft) is one of Switzerland’s true reference points—an estate in the Donatsch family since 1897, anchored by the historic “Zum Ochsen” and carried today by Martin Donatsch in the fifth generation.
