Domaine Amiot Servelle

Winemaker Profile | Burgundy, France

Domaine Amiot-Servelle, under the leadership of Antoine and Prune Amiot, is experiencing an exciting new phase, continuing the family legacy with fresh dynamism and deep commitment. The next generation emphasizes precise and minimalist cellar work to preserve the natural purity of the soil in each wine. Since its founding in the 1920s, the estate in Chambolle-Musigny, located in the renowned Côte de Nuits, has evolved from a small family operation to one of the leading certified organic producers. In 2018, the winery began converting to biodynamic farming, building upon the ecological practices implemented since 2003 and reflecting their profound respect for the terroir.

The vineyards of Amiot-Servelle, spanning approximately seven hectares and primarily planted with Pinot Noir, are distributed across a variety of prestigious Premier Cru sites, including Les Amoureuses, Les Fuées, and Les Charmes. These sites, with their diverse soils, impart distinctive finesse and depth to the wines: the limestone-rich parcels in higher-altitude areas contribute exceptional finesse and aromatic intensity, while the mid-altitude clay-limestone soils lend structure and richness. At the village level, the wines are distinguished by the elegance and complexity characteristic of Chambolle-Musigny.

In the modern winery, the team focuses on manual harvesting, spontaneous fermentation in stainless steel tanks, and aging for 16 to 18 months in French oak. With this approach, which combines artisanal tradition with innovative techniques, Antoine and Prune Amiot create wines that reflect the diversity and depth of the Chambolle-Musigny terroir, fully realizing the potential of their vineyards.
