Viticulture: Sustainable farming in the Perno subzone of Monforte d’Alba. South-east-facing vineyards are treated minimally, using only sulphur- and copper-based products. Hand harvested.

Winemaking: Destemmed grapes ferment spontaneously in stainless-steel vats with around 10 days of skin contact. Aged for nine months in stainless steel, followed by at least six months in bottle. Naturally cold stabilised, unfined and unfiltered.

Ca' di Press, a recent venture by the Pressenda family in Monforte d'Alba, Piedmont, specializes in Barolo wines. Initiated by Alice and Cristina Pressenda, the winery produced its first vintage in 2018 from just one cask. The estate practices minimal intervention viticulture, emphasizing terroir through traditional vinification and natural stabilization without filtration​.
