Region: Saint-Aubin Premier Cru, Côte de Beaune, Burgundy, France

Viticulture: Sustainable traditional farming. Hand-harvested Chardonnay from a steep, south-west-facing vineyard above the hamlet of Gamay. Vines planted in the early 2000s on shallow, stony limestone soils. 

Winemaking: Whole-bunch pressing without crushing, using long, gentle press cycles. Indigenous-yeast fermentation in 350-litre French oak barrels. Aged for 15–20 months without bâtonnage, with around 20–30% new oak, then bottled without filtration.

Il met l'accent sur le terroir, utilise une agriculture durable et de longues périodes de vieillissement. Fondé en 2005, son domaine comprend des vignobles Premier Cru et Grand Cru, produisant des vins non filtrés, riches en minéraux, attendus avec impatience chaque millésime.
