Region: Champagne Grand Cru, Avize, Côte des Blancs, France

Viticulture: Certified organic and biodynamic farming. Two parcels, Chemin de Plivot and Chemin de Flavigny, with 65-year-old vines on poor soils over surface chalk. Hand harvested.

Winemaking: Gently pressed and lightly settled. Spontaneous alcoholic and malolactic fermentation in barrels and Stockinger foudres. Aged on the lees for nearly one year without fining or filtration, followed by at least nine years on the lees in bottle. Extra Brut dosage of 2 g/L.
