Region: Nuits-Saint-Georges, Côte de Nuits, Burgundy, France 

Viticulture: Parcel on the northern side of Nuits-Saint-Georges beneath 1er Cru Aux Bousselots, on a gentle east-facing slope with limestone-rich soils. Organically or biodynamically farmed and hand harvested in small bins. 

Winemaking: Fermented with indigenous yeasts using one-third whole bunches, one-third baie-par-baie berries and one-third destemmed fruit, with gentle extraction and slow pressing. Aged in mostly neutral oak. No sulphur added until bottling.

Pierre-Olivier Garcia, un vigneron en Bourgogne, France, a établi son domaine à Nuits-St-Georges en 2016. Il se spécialise dans le Pinot Noir, le Gamay et l'Aligoté, et est connu pour sa compréhension approfondie du terroir de la région. Garcia utilise une méthode unique et laborieuse appelée 'baie par baie', sélectionnant à la main les raisins pour des vins très parfumés et détaillés. Son approche innovante lui a valu reconnaissance et émulation au sein de la communauté viticole bourguignonne.
