Region: Saint-Émilion Grand Cru, Bordeaux, France

Viticulture: Agroecological farming without herbicides, insecticides or anti-rot treatments. The 39.5-hectare vineyard is divided into 55 individually managed plots and planted to 52% Cabernet Franc, 43% Merlot and 5% Cabernet Sauvignon. A complex mosaic of gravel, clay and sandy soils. Permanent plant cover, agroforestry, massal selection and hand harvesting. 

Winemaking: Destemmed grapes are transferred by gravity and vinified plot by plot in temperature-controlled concrete vats. Fermentation begins with an indigenous-yeast starter, followed by gentle manual pump-overs and extended post-fermentation maceration. Malolactic fermentation takes place in vat. Aged for 16–18 months in 100% new French oak barrels.
