Viticulture: Sustainable viticulture. Selected fruit from Grand Cru vineyards across Champagne and the Premier Cru of Hautvillers. Strict selection and hand harvesting. 

Winemaking: Fermented in stainless-steel tanks with full malolactic fermentation and no oak. Traditional secondary fermentation followed by at least eight years on the lees in bottle. Dosage varies from 3-10g/L .
